- 2 cans (20 oz each) pineapple chunks, drained
- 1 cup shredded cheddar cheese
- 1 cup crushed Ritz crackers
- 1/4 cup melted butter
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a medium-sized baking dish.
- In a large bowl, combine the drained pineapple chunks, sugar, and flour. Mix until evenly coated.
- Transfer the pineapple mixture to the greased baking dish and spread it out evenly.
- Sprinkle the shredded cheddar cheese over the pineapple layer.
- In a separate bowl, mix the crushed Ritz crackers with the melted butter until combined. Spread this mixture evenly over the cheese layer.
- Bake in the preheated oven for 25–30 minutes, or until the topping is golden brown and crispy.
- Remove from the oven and let cool for 5–10 minutes before serving.
Notes
- For a gluten-free version, use gluten-free crackers and flour.
- If you want a less sweet casserole, reduce the sugar to 1/4 cup.
